Main: Autumn Moon® Pear & Nut Garden Salad
Total Time: About 15–20 minutes Yield: 2 large or 3 small servings
Ingredients:

Autumn Moon® pear (julienned) / 1 pc

Mixed baby greens – 2–3 cups

Red leaf lettuce or radicchio / handful

Roasted or honey-glazed walnuts 1/4 cup

Blue / feta / goat cheese – 2–3 / tbsp

Red onion (thinly sliced) – 1/4 pc

Pomegranate seeds / orange slices

Vinaigrette Dressing

Olive oil / 3 tbsp

Apple or red wine vinegar / 1.5 tbsp

Dijon mustard / 1 tsp

Honey / tsp

Salt / pinch

Black pepper / to taste

Lemon zest – 1/2

Steps:

Step 1

Whisk all dressing ingredients together. Add onion slices. Let rest.


Step 2

Toss greens, pear, nuts, cheese and most of the vinaigrette in a bowl.


Step 3

Plate and garnish with fruit. Drizzle remaining dressing.
